Corn is in season. It’s summertime, which means the grill is begging for you to fire it up. So get after it. Make something for someone you love, even if that person is you.
Mexican Corn Salad
4 ears corn, corn cut off the cob
Olive oil, as needed
½ cup Cotija cheese, crumbled (you can find it next to the queso fresco in the grocery)
½ cup black beans
4 strips of bacon, cooked, crumbled
1 jalapeno, diced
1 medium tomato, diced
1 large avocado, diced
1 tbsp. cilantro, minced
Lime juice from ½ lime
Salt, to taste
1. Saute the corn in a pan over medium-high heat until lightly browned all over, about 8-10 minutes.
2. Combine remaining ingredients in a bowl and toss. Season to taste with salt.
All the corn on the cob recipes work the same: grill the corn to your fancy, and while it's still warm, add the following ingredients. If you want extra-melty cheese, throw it back on the grill for a hot second and watch it turn into something amazing.
The "Spice it Up" Corn Recipe:
Miso butter (mix 2 parts butter to 1 part white miso)
The "Tex Mex" Corn Recipe"
Mexican crema (or sour cream, or ranch, if you’re feeling nasty)
Cotija or queso fresco, crumbled
Chipotle powder or chili powder
The "American" Corn Recipe:
Sharp cheddar cheese, shredded
